Description of the unit
The proofer is a unit that enables the rise of raw, raw-frozen or fresh baguettes, bread or any
other viennoiserie within 2 to 2 ½ hours.
This product is meant for a professional use and must be used by qualified staff only. It must
be installed in conformity with professional practice standards by a qualified installer.
The nameplate is located on the back of the product.

Technical data
The proofer is fitted with an electronic thermostat pre-set at 28°C. The temperature can be
set in a range from 15 to 90°C. In order to change the advised temperature:
Keep the set button pressed until the temperature appears on the indicator.
Then you can use the arrows in order to increase or decrease the temperature, until
you reach the wished one.
Once you have set the temperature, press both buttons simultaneously in order to
exit.
The total power of the unit is 1400 W, i.e. a current input of 6 A, single-phased.
This power enables the rise of raw and fresh baguettes, bread or any other viennoiserie on 8
grids 600 x 400 mm within 2 hours (2 ½ hours for raw-frozen products), at a temperature of
28°C.
Thanks to the push button, you can add some water in the container located right under the
heating element.
It is recommended not to set a too high temperature as this could damage the pastry, and as a
consequence harm the quality of your product.
Operating instructions
This unit is fitted with:
- a green pilot light
- an On/Off switch
- a water injection button
- an electronic thermostat
Maintenance
Before any maintenance, make sure that the proofer is cold, i.e. at the room temperature.
The unit must be cleaned regularly with a damp sponge.
Do not wash your proofer under sprinkling water as this could seriously damage its electric
parts.
For a better service, your proofer should be maintained by a qualified installer regularly.
Installation
If the proofer is to be placed very close to a wall, a partition, a kitchen cabinet, decorative
borders, etc., make sure that they are made of non-combustible material. Otherwise, they
should be covered with appropriate non-combustible thermal insulating material.
A 30 cm distance between the wall and the unit is sufficient.
Electric connection
Before any electric connection, do check the voltage and current of your network.
Your proofer is delivered with a stackable set that enables you to fix the convection oven
FC 110 E / EG above (see attached picture).
