INTRODUCTION
The patented Hatco Flav-R-Savor
®
Heated Air Curtain Cabinets
are designed to hold prepared foods for prolonged periods of
time while maintaining that “just-made” quality. Warm air is
forced downward through ducts in front of the cabinet opening,
creating and maintaining ideal holding temperatures without
the use of doors. The heated air is slowly drawn to the center
and sides of the cabinet, passing over the food as it flows to
the perforations on the cabinet walls. The Heated Air Curtain
cabinet allows for immediate access to food products and
provides the best environment for wrapped or unwrapped
sheet pan foods.
Hatco Flav-R-Savor Heated Air Curtain Cabinets are products
of extensive research and field testing. The materials used
were selected for maximum durability, attractive appearance,
and optimum performance. Every unit is inspected and tested
thoroughly prior to shipment.
This manual provides the installation, safety, and operating
instructions for Flav-R-Savor Heated Air Curtain Cabinets.
Hatco recommends all installation, operating, and safety
instructions appearing in this manual be read prior to
installation or operation of a unit.

IMPORTANT SAFETY INFORMATION
CAUTION
BURN HAZARD:
Some exterior surfaces on unit will get hot. Use caution
when touching these areas.
Allow unit to cool before performing any cleaning,
adjustments, or maintenance.
Pan/tray will be very hot upon removal—use oven mitt,
protective clothing, or pan gripper to remove.
Locate unit at proper counter height in an area that is
convenient for use. Location should be level to prevent
unit or its contents from falling accidentally and strong
enough to support weight of unit and contents.
The National Sanitation Foundation (NSF) requires that
units over 36" (914 mm) in width or weighing more than
80 lbs. (36 kg) either be sealed to or raised above the
installation surface. If unit cannot be sealed at the point
of use, 4" (102 mm) legs are included to allow for proper
cleaning access below unit.
NOTICE
Use non-abrasive cleaners and cloths only. Abrasive
cleaners and cloths could scratch finish of unit, marring its
appearance and making it susceptible to soil accumulation.
Do not lay unit on the side with the control panel. Damage
to unit could occur.
Clean unit daily to avoid malfunctions and maintain
sanitary operation.
Product failure caused by liming or sediment buildup is
not covered under warranty.
Do not locate unit in area with excessive air movement
around unit. Avoid areas that may be subject to active air
movements or currents (i.e., near exhaust fans/hoods, air
conditioning ducts, and exterior doors).
WARNING
ELECTRIC SHOCK HAZARD:
Plug unit into a properly grounded electrical receptacle
of the correct voltage, size, and plug configuration. If
plug and receptacle do not match, contact a qualified
electrician to determine and install proper voltage and
size electrical receptacle.
• Turn OFF power switch, unplug power cord, and
allow unit to cool before performing any cleaning,
adjustments, or maintenance.
DO NOT submerge or saturate with water. Unit is not
waterproof. Do not operate if unit has been submerged
or saturated with water.
Unit is not weatherproof. Locate unit indoors where
ambient air temperature is a minimum of 70°F (21°C).
• Do not steam clean or use excessive water on unit.
This unit is not “jet-proof” construction. Do not use
jet-clean spray to clean this unit.
• Do not pull unit by power cord.
• Discontinue use if power cord is frayed or worn.
Do not attempt to repair or replace a damaged power
cord. Cord must be replaced by an Authorized Hatco
Service Agent or a person with similar qualifications.
Use only Genuine Hatco Replacement Parts when
service is required. Failure to use Genuine Hatco
Replacement Parts will void all warranties and may
subject operators of the equipment to hazardous
electrical voltage, resulting in electrical shock or burn.
Genuine Hatco Replacement Parts are specified to
operate safely in the environments in which they are
used. Some aftermarket or generic replacement parts
do not have the characteristics that will allow them to
operate safely in Hatco equipment.
FIRE HAZARD Hazard: Locate unit a minimum of 1″
(25 mm) from combustible walls and materials. If safe
distances are not maintained, discoloration or combustion
could occur.
This unit has no “user-serviceable” parts. If service is required
on this unit, contact an Authorized Hatco Service Agent or

®
Heated Air Curtain Cabinets consist of an easy
to clean stainless steel front panel and black powdercoat
painted body. Features include easy-to-use digital temperature
controller, a lighted On/Off switch, a metal sheath heating
element and 6' (1829 mm) power cord with plug.
FSHAC-2 and FSHAC-3 Models
The FSHAC non-humidified Heated Air Curtain Cabinet is
available in two-pan or three-pan models, holding half-sized
sheet pans. The FSHAC-2 (two-pan model) comes equipped
with four rubber feet. The FSHAC-3 (three-pan model) comes
equipped with 4" (102 mm) legs, which require assembly to the
unit before operation. Models may be ordered with the accessory
back-to-back on a single base mounting kit allowing for two units
to be mounted back-to-back. Temperature range of this unit is
80°–175°F (27°–79°C).

The FSHACH humidified Heated Air Curtain Cabinet is available

both having the capacity to hold 2-1/4 gallons (9 liters). The
FSHACH-2 (two-pan model) comes equipped with four rubber
feet. The FSHACH-3 (three-pan model) comes equipped with
4" (102 mm) legs which require assembly to the unit before
operation. Models may be ordered with the accessory back-
to-back on a single base mounting kit allowing for two units
to be mounted back-to-back. Temperature range of this unit is

The FSHAC-2PT is a pass-through style unit which allows
for food product access from either side. The unit is non-
humidified and is capable of holding two full size sheet pans.
The temperature range of this unit is 80°–175°F (27°–79°C).
FSHACH-2PT Models
The FSHACH-2PT is a pass-through style unit which allows
for food product access from either side. The unit is humidified
and is available in auto- fill or manual fill versions, both having
the capacity to hold 3 gallons (11 liters). The unit is capable of
holding two full size sheet pans. The temperature range of this
unit is 80°–175°F (27°–79°C).

INSTALLATION
Installing 4" (102 mm) Legs
Some units may be supplied with 4" (102 mm) legs. Use the
following procedure to install the legs.
CAUTION

80 lbs. (36 kg) either be sealed to or raised above the
installation surface. If unit cannot be sealed at the point
of use, 4" (102 mm) legs are included to allow for proper
cleaning access below unit.
NOTICE
Do not lay unit on the side with the control panel. Damage
to unit could occur.
NOTE: Additional help may be needed to maneuver the unit to
the proper position for installing legs.
1. Carefully lay the unit down on a side without controls. This
step requires at least two people.
2. Remove the feet currently installed in each of the four
corners on the bottom of the unit.

The Flav-R-Savor
®
Heated Air Curtain Cabinets are shipped
with most components installed and ready for operation. The
following installation instructions must be performed before
plugging in and operating the cabinet.
WARNING
ELECTRIC SHOCK HAZARD:
Plug unit into a properly grounded electrical receptacle
of the correct voltage, size, and plug configuration. If
plug and receptacle do not match, contact a qualified
electrician to determine and install proper voltage and
size electrical receptacle.
Unit is not weatherproof. Locate unit indoors where
ambient air temperature is a minimum of 70°F (21°C).

2. Remove tape and protective film from all surfaces of unit.
3. Place the unit in the desired location. This step requires at
least two people.
Locate the unit in an area where the ambient air
temperature is constant and a minimum of 70°F
(21°C). Avoid areas that may be subject to active air
movements or currents (i.e., near exhaust fans/hoods,
air conditioning ducts, and exterior doors).
Make sure the unit is at the proper counter height in an
area convenient for use.
Make sure the countertop is level and strong enough to
support the weight of the unit and food product.
Make sure all the feet on the bottom of the unit are
positioned securely on the countertop.
4. Seal the unit to the countertop using an NSF-approved
sealantorinstalltheincluded4″(102mm)legs.Referto
the“Installing the 4″ (102 mm) Legs” procedure in this
section.
5. Install any options or accessories that came with the unit.
Refer to the OPTIONS AND ACCESSORIES section for
details.
6. Plug the unit into a properly grounded electrical receptacle
of the correct voltage, size, and plug configuration. See
the SPECIFICATIONS section for details.

INSTALLATION

Auto-Fill Installation
NOTE: Water supply inlet and drain connections must be made
withflexiblehose.Ifrequired,aballvalveorgatevalve,
linestrainer,union(s)andvacuumbreakerorotheranti-
siphon device must be supplied by plumber or installer.
NOTE: Water filter must be used and maintained. Product
failure caused by liming or sediment buildup is not
coveredunderwarranty.
Materials required for installation include plumbing tape or pipe
sealant, and appropriate fittings for application.
NOTICE
Product failure caused by liming or sediment buildup is
not covered under warranty.
1. Turn off water supply.
2. Insert 1/4" OD water supply tubing fully into water inlet by
pushing in fitting on unit.
NOTE: Install filter cartridge with flow arrow towards the
equipment.
3. Insert other end of 1/4" water supply tubing fully into filter
cartridge by pushing in fitting on unit. (Filter supplied by
Hatco, P/N 03.05.079.00.) Use minimum length tubing
from filter to unit.
4. Connect other end of filter cartridge assembly to 1/4" water
supply inlet with a shut-off valve. Filter connection fits 1/4"
OD nylon tubing. Use adapter fittings to connect to copper
tube or pipe connection.
Pressure Range: 20–125 psi (138–862 kPa)
Temperature Range: 35°–100°F (2°–38°C)
5. Tighten connections securely.
6. Turn water supply on. Check for leaks before leaving
installation.
NOTE:Flushnewfiltercartridgewithwaterforfiveminutes
before use.
See MAINTENANCE section for Filter Cartridge Replacement.
A drain connection is located inside the cabinet cavity for
manually draining the water reservoir. A male hose connector
is included. See MAINTENANCE for draining information.

OPERATION
General
Use the following procedures to turn on, prepare, and shut
down the Heated Air Curtain Cabinets.
WARNING
Read all safety messages in the IMPORTANT SAFETY
INFORMATION section before operating this equipment.
Startup
1. Plug unit into a properly grounded electrical receptacle of
the correct voltage, size and plug configuration. See the
SPECIFICATIONS section for details.
2. Fill all the shelves of the unit with empty sheet pans.
For enclosed units, make sure all pans are pushed
completely against the back of the cabinet.
• For pass-through units, make sure all pans are behind
the line next to the arrow inside each end of the cabinet.
NOTE:Keepingthesheetpansintheproperpositionallows
theaircurrentsintheunittoflowproperlyandmaintain
therequiredtemperature.
3. Move the Power I/O (on/off) switch to the I (on) position.
The heating elements and blowers will energize.
The digital temperature controller will energize and the
current temperature of the cabinet or “LO” will appear
on the display. “LO” indicates the cabinet temperature
is below 70°F (21°C).
CAUTION

4. On humidified units, set the humidity to the desired level
(refer to the “Setting the Humidity Level” procedure in this
section).
5. Set the air temperature to the desired temperature (refer
to the “Setting the Air Temperature” procedure in this
section).
6. Allow the unit 30 to 60 minutes to reach the setpoint
temperature before loading preheated food product onto
the sheet pans.
Shutdown
1. Move the Power I/O (on/off) switch to the O (off) position
and allow the unit to cool.
NOTE:Acoolingfaninsidetheunitwillrunforashorttimeafter
the unit is turned off.
2. Perform the “Daily Cleaning” procedure in the
MAINTENANCE section of this manual.
Setting the Air Temperature
1. Press the key to enter temperature mode (“tSP” will
appear on the CABINET TEMPERATURE display).
2. Press the key again to show the current temperature
setting.
3. Press the key or key to reach the desired
temperature.
The temperature range is 80°–175°F (27°–79°C) for
non-pass-through models and 80°–200°F (27°–93°C) for
pass-through models in single degree increments.
4. After the desired temperature is set, press the to
confirm the setting.
NOTE: Temperature and humidity settings may vary depending
uponproductmake-upandconsistency.Thecabinet
temperature display shows the lowest temperature
pointinsidethecabinet,nottheproducttemperature.
Setting the Humidity Level
1. Press the key to enter humidity mode (“hSP” will
appear on the cabinet temperature display).
2. Press the key again to show the current humidity level.
3. Press the key or key to reach the desired humidity
level. Humidity range is 0 through 5 (0 is no humidity, 1 is
the lowest amount of humidity, and 5 is the highest).
Control Panel
4. After the desired humidity level is set, press the to
confirm the setting.
The capacity of the water reservoir permits uninterrupted
operation for approximately 4–8 hours, depending on the
settings. For manual fill models, when “LO H2O” is flashing on
the cabinet temperature display, add water to the reservoir. The
water reservoir refill capacity is approximately 96 ounces, or 3
quarts (2.8 liters).
WARNING
ELECTRIC SHOCK HAZARD: Overfilling can cause
electrical shock. Water reservoir is full when “LO H2O”
stops flashing on CABINET TEMPERATURE display. Stop
filling when “LO H2O” stops flashing on display.

1. Move the Power I/O (on/off) switch to the O (off) position
and allow the unit to cool.

2. Remove and wash all food sheet pans.
3. Wipe the exterior and interior of the unit with a clean,
sanitized cloth.
Hard to reach areas may be cleaned using a small brush
and mild soap.
Stubborn stains may be removed with a good stainless
steel cleaner or a non-abrasive cleaner.
Filter Cartridge Replacement
(Humidified Models Only)
(Hatco P/N 03.05.079.00)
Replace cartridge filter when any of the following occur:
Noticeable drop in water flow.
Unpleasant tastes and/or odors return.
Cartridge capacity is reached.
Every six months.
Follow these instructions when replacement is necessary:
1. Turn off water supply.
2. Remove old cartridge by pushing fitting inward and pull out
tubing.
NOTE:Install filter cartridge flow with arrow towards the
equipment.
3. Insert 1/4" water supply tubing fully into filter cartridge by
pushing in fitting on unit.
4. Connect other end of filter cartridge assembly to 1/4" water
supply inlet. Filter connection fits 1/4" OD nylon tubing.
Use adapter fittings to connect to copper tube or pipe
connection.
Pressure Range: 20–125 psi (138–862 kPa)
Temperature Range: 35°–100°F (2°–38°C)
5. Tighten connections securely.
6. Turn water supply on. Check for leaks before leaving
installation.
NOTE:Flushnewfiltercartridgewithwaterforfiveminutes
before use.
Pass-Through Serving Instructions
Use the following instructions to load a pass-through unit
(Model FSHACH-2PT) and serve food product once the unit
has reached operating temperature. Pass-through units can be
loaded and unloaded from either side.
Always keep a full size sheet pan or two half-size sheet
pans on the bottom shelf.
Once the unit is at setpoint temperature, load the sheet
pans by pulling out one at a time, loading it with food
product, and then replacing it in the unit.
If using wire racks on the sheet pans; when the front wire
rack on a sheet pan is empty, remove the wire rack and
slide the second wire rack forward on the same pan using
tongs.
When two sheet pans are being used:
Access the food product by reaching in with tongs and
pulling the pan approximately half-way out of the unit.
Serve the food product and then push the sheet pan back
into the unit with tongs. Make sure the pan is behind the line
next to the arrow inside each end of the unit.
When one sheet pan is being used:
Position the sheet pan on the bottom shelf.
Reach in with tongs and serve the food product. Do not pull
out the sheet pan.
NOTE:For proper operation and air flow, FSHACH-2PT
models must have at least one pan in the unit on the
bottom shelf at all times.

Draining the Water Reservoir
The water reservoir in humidified units must be drained prior to
moving the cabinet as well as during the “Removing Lime and
Mineral Deposits” procedure.
WARNING
ELECTRIC SHOCK HAZARD: Turn OFF power switch,
unplug power cord, and allow unit to cool before
performing any cleaning, adjustments, or maintenance.
1. Turn off the unit, unplug the power cord, and allow the unit
to cool.
NOTE:Acoolingfaninsidetheunitwillrunforashorttimeafter
the unit is turned off.
2. Locate the valve inside the cabinet on the underside of the
ceiling sheet. CAUTION: BURN HAZARD—Ceiling sheet
and water in reservoir are hot during operation. Allow
to cool before draining.

3. Position a one gallon (four liter) container under the water
outlet to hold the draining water.
4. Turn the valve handle from the horizontal position (closed)
to the vertical postion (open) to drain the reservoir.
5. Once the reservoir is empty, close the valve.

mineral content, follow the REMOVING LIME AND
MINERAL DEPOSITS procedure for periodic cleaning
anddelimingofthewaterreservoir.
NOTE: Unit failure caused by liming or sediment buildup is not

Removing Lime and Mineral Deposits
Use the following procedure for periodic cleaning and de-liming
of the water reservoir in humidified units.
NOTE:The lime andmineral content ofthe water usedfor
dailyoperationwilldeterminehowoftenthedeliming
procedure must be performed.
NOTE:Performthisprocedurewhentheunitwillnotbeused
foraperiodoftime,suchastheendoftheday.
1. Turn off the unit, unplug the power cord, and allow the unit
to cool.
NOTE:Acoolingfaninsidetheunitwillrunforashorttime
after the unit is turned off.
2. After the unit has cooled down, perform the “Draining the
Water Reservoir” procedure in this section.
3. Fill the water reservoir with a mixture of 75% water and
25% white vinegar. Do not use flavored vinegar.
4. Plug in and turn on the unit.
5. Set both the air temperature and humidity to their highest
settings and allow the unit to run for 60 minutes.
6. Turn off the unit, unplug the power cord, and allow the unit
to cool.
NOTE:Acoolingfaninsidetheunitwillrunforashorttime
after the unit is turned off.
7. Perform the “Draining the Water Reservoir” procedure to
empty the deliming solution from the water reservoir.
8. Continue to fill and drain the water reservoir with clean
water until the deliming solution is rinsed through and the
water discharge is clean.
9. Plug the unit into its power source and fill the reservoir
as usual for daily operation using the procedure in the
OPERATION section of this manual.

1. PRODUCT WARRANTY
Hatco warrants the products that it manufactures (the
“Products”) to be free from defects in materials and
workmanship, under normal use and service, for a period of
one (1) year from the date of purchase when installed and
maintained in accordance with Hatco’s written instructions
or 18 months from the date of shipment from Hatco. Buyer
must establish the Product’s purchase date by registering the
Product with Hatco or by other means satisfactory to Hatco in
its sole discretion.

be limited solely, at Hatco’s option, to repair or replacement
using new or refurbished parts or Product by Hatco or a Hatco-
authorized service agency (other than where Buyer is located
outside of the United States, Canada, United Kingdom, or
Australia, in which case Hatco’s liability and Buyer’s exclusive
remedy hereunder will be limited solely to replacement of part
under warranty) with respect to any claim made within the
applicable warranty period referred to above. Hatco reserves
the right to accept or reject any such claim in whole or in part. In
the context of this Limited Warranty, “refurbished” means a part
or Product that has been returned to its original specifications

brevetées sont conçues pour conserver des plats préparés

ATTENTION
DANGER DE BRÛLURE :
Certaines surfaces extérieures de l’appareil deviennent

Laissez l’appareil refroidir avant d’effectuer tout
nettoyage, réglage ou entretien.
• Les plaques/plateaux seront très chauds lorsqu’il
faudra les retirer — utilisez une manique, un torchon
ou une pince pour leur retrait.
Placer l’appareil sur un plan de travail de hauteur correcte
à un endroit qui convient pour son utilisation. Le support
doit être de niveau pour éviter toute chute accidentelle du
grille-pain ou de son contenu et suffisamment solide pour
résister au poids de l’appareil et de son contenu.
La National Sanitation Foundation (NSF) exige que les
appareils d’une largeur supérieure à 914 mm (36") ou
pesant plus de 36 kg (80 lb) soient fixés sur le plan de
travail ou installés au-dessus de ce dernier. Si l’appareil
ne peut pas être fixé sur l’emplacement d’utilisation,
des pieds de 102 mm (4") sont fournis pour permettre le
nettoyage en dessous de l’appareil.
AVIS
Utilisez uniquement des nettoyants non abrasifs et des
chiffons doux. Les chiffons et nettoyant abrasifs pourraient
rayer la finition de l’unité, altérant son apparence et la
rendant vulnérable à l’accumulation de saleté.

Ne pas tenter de réparer ni de changer un cordon

d’accéder aux aliments des deux côtés. L’appareil est humidifié
et disponible en version à remplissage automatique ou manuel,
les deux pouvant contenir 11 litres (3 gallons). Cet appareil
peut contenir deux plateaux de dimension ordinaire. La plage
de températures de l’appareil est comprise entre 27 et 93°C
(80 et 200°F).

INSTALLATION
6. Branchez l’appareil à une prise de courant de la bonne
tension, taille et configuration de fiche reliée à la terre.
Consultez la section CARACTÉRISTIQUES pour obtenir
plus de détails.
Installation des pieds de 102 mm (4")
Certains appareils peuvent être fournis avec des pieds de
102 mm (4"). Suivez la procédure suivante pour installer les
pieds.
ATTENTION
La National Sanitation Foundation (NSF) exige que les
appareils d’une largeur supérieure à 914 mm (36") ou
pesant plus de 36 kg (80 lb) soient fixés sur le plan de
travail ou installés au-dessus de ce dernier. Si l’appareil
ne peut pas être fixé sur l’emplacement d’utilisation,
des pieds de 102 mm (4") sont fournis pour permettre le
nettoyage en dessous de l’appareil.
AVIS
Ne couchez pas l’appareil sur le côté comportant le
panneau de commande. Cela pourrait endommager
l’appareil.
NOTA:Une aide supplémentaire peutêtre nécessairepour
déplacer l’appareil dans une position adaptée à
l’installation des pieds.
1. Positionnez soigneusement l’appareil avec le panneau de
commande tourné vers le haut. Cette étape nécessite au
minimum deux personnes.
2. Retirez les pieds actuellement installés à chacun des
quatre coins situés sous l’appareil.

3. Fixez les pieds de 102 mm (4")
en les tournant dans le sens des
aiguilles d’une montre à l’intérieur
de chacun des orifices filetés
positionnés aux quatre coins du
dessous de l’appareil. Serrez à la
main jusqu’à ce qu’ils soient bien
en place. Ne serrez pas trop.
4. Placez l’appareil à la verticale et déplacez-le vers
l’emplacement d’utilisation souhaité. Cette étape nécessite
au minimum deux personnes.
NOTA: Lespiedsde102mm(4")sontréglablespourmettre
à niveau l’appareil. Utilisez une clé à molette pour
effectuerlesréglagesdemiseàniveauunefoisque
l’appareilestplacédanssapositionfinale.
Généralités
Les armoires à rideau d’air chaud Flav-R-Savor® sont livrées
avec la plupart des composants déjà installés et prêts à
l’emploi. Les instructions d’installation suivantes doivent être
exécutées avant le branchement et l’utilisation de l’armoire.
AVERTISSEMENT
DANGER DE DÉCHARGE ÉLECTRIQUE:

L’appareil n’est pas à l’épreuve des intempéries. Placer
l’appareil à l’intérieur à une température ambiante de
21°C minimum.
DANGER D’INCENDIE : Placez l’appareil à au moins 25 mm
(1") de murs ou de matières inflammables. Si ces distances
de sécurité ne sont pas respectées, une décoloration ou
une combustion peut se produire.
ATTENTION
Placer l’appareil sur un plan de travail de hauteur correcte
à un endroit qui convient pour son utilisation. Le support
doit être de niveau pour éviter toute chute accidentelle du
grille-pain ou de son contenu et suffisamment solide pour
résister au poids de l’appareil et de son contenu.
1. Retirer l’appareil de sa boîte.
NOTA: Pouréviterdesretardsdansl’obtentiondelacouverture
de la garantie, complétez l’enregistrement en ligne
devotregarantie. Lisez la section INFORMATIONS
IMPORTANTES POUR LE PROPRIETAIRE pour plus
dedétails.
2. Retirer le ruban et le film de protection de toutes les
surfaces de l’appareil.
3. Placez l’appareil à l’endroit désiré.
Placez l’appareil à un endroit où la température ambiante
est constante et de 21°C (70°F) minimum. Évitez les
endroits susceptibles d’activer les mouvements ou
les courants d’air (comme à proximité de ventilateurs
d’échappement/de hottes d’aspiration, de conduites de
climatisation, de fenêtres pour vente à emporter et de
portes extérieures).
Assurez-vous que l’appareil est à la bonne hauteur du plan
de travail dans un espace pratique pour son utilisation.
Assurez-vous que le plan de travail est de niveau et
suffisamment solide pour supporter le poids de l’appareil
et des produits alimentaires.
Veuillez vous assurer que tous les pieds en dessous de
l’appareil sont fermement positionnés sur le comptoir.
4. Fixez l’appareil au plan de travail en utilisant un enduit
d’étanchéité approuvé par la NSF ou installez les pieds
de 102 mm (4") inclus. Reportez-vous à la procédure
« Installation des pieds de 102 mm (4") » dans cette
section.
5. Montez les accessoires qui accompagnent l’appareil.
