Clean drip trays and liners after every use.
, If you smell gas, tile installer has not done
a proper job of checking tot leaks. You call

Finding a gas leak is NOT a do-it-yourself
procedure. Some leaks call only be flmnd

" If by some chance a hurner goes out and
gas escapes, open a window or a door to
let the room air out. Do not attempt to
use tile appliance until the gas has had

" Do not use aluminum foil to line any part of
the cooktop. Using a fl)il liner could result ill

, Use proper pan size--avoid pans that are
unstable or easily tipped. Select cookware
having fiat bottoms large enough to properly

spillovers and large enough to cover burner
grate. This will both save cleaning time and
prevent hazardous accmnulations of fl)od,
since hea W spattering or spillovers leit on the
cooktop can ignite. Use pans with handles
that can be easily grasped and remain cool.
, Keep all plastics away from the top burners.
, Do not leave plastic items on the cooktop--
they may melt if left too close to the vent.
, To avoid the possibility of a burn, always be
certain that the controls fl)r all burners are at
the OFF position and all grates are cool

All burner grates are designed to support
wok cooking. For easy access and additional
clearances to combustibles, we suggest using
a fl'ont burner for wok cooking.
Liit out one bm'ner grate at tile front. Turn

wok side is contoured to support a wok with
a round or bowl shaped bottom. This design
eliminates tlle need fi/r a wok ring and will
aCCOlnlnodate lnost woks.
Check to be sure that yore" wok fits securely
and is stable when placed on the wok grate.
CAUTION: Good wok stability is best achieved
by using round-bottom woks. Flat-bottom woks
are not recommended. Avoid using woks with
extremely smooth, tmtextured, bottom sm'ihce
finishes as these may allow undesired rocking
of the wok in the grate cradle.

Occasionally grease drippings ignite. These
drippings will create minor putts of flame t(_r
a second or two. This is nom_al when cooking
on a barbecue. You may find it handv to have
a spray bottle filled with water to lightly spray
tile flare-up.
If the flare e becomes excessive, rein ore the
fi)od fl'om the grill, i,ower the heat setting.
Replace tile ti_od when tile flare-up subsides.
To prevent flare-ups fl'om hal)pening, trim
tile t_t fl'om aro/md the edges of steaks and
chops, rise hambm'ger that is lean, remove
tile t_t fl'om poult_T; etc.
When tm'ning any kind of meat or poult_T;
the melting t_t will drop onto the grill radiant
and may create a flare-up. If this hal)pens,

Tile two-piece cast stainless steel grill grates
are reversible. Place the side with the two
grooved tabs toward the back of the cooktop.
The grate will change color when subjected
to tile heat, and as oils cook onto tile sm't_ce.
This is normal and does not attect the cooking
l)ei'foi'ill_l i1 ce,
For best results, tile grate should be seasoned
before tile first rise. Seasoning will insm'e a
stick-resistant cooking s/u'l_ce. If the grill has
not been used for a period of time, it should
be i'ese_lsoned.
To season the grill grate:
1 Clean tile grate thoroughly with hot, soapy
water to remove any mantll_('tm'ing oils, etc.
2 Rinse with a mixtm'e of 2 cups water and
1/2 cup white vinegar. D_T thoroughly.
3 Using a heavy cloth, iub vegetable oil over
tile entire s/u't_ce of tile rack. Do not use
corn oil, as it can get sticky.
4 Place grate into the grill housing. Turn the
Urn'net on to a meditm_ setting. Tm'n tile
Urn'net off when tile oil begins to smoke.
Allow grates to cool.
5 Repeat steps 3 and 4.
The grill is now ready fi)r use.
One side of the grates (side A) is ridged and
should be rise(1 fi)r foods where w)u want the
t_t to ttm oft, stlch as steak or hambm'ger
patties. The ridges are sloped so the t_t runs
toward the fl'ont of the grill, into a drain hole
and down to a drip tray below.

Remove the cover before lighting the burne_:
The cover must be removed when using the grill.
Betiwe starting to cook on the grill, be stu'e the
drip tray and liners are in place and that you
have the grill racks turned to the side vou want
t0r cooking.
Preheat the grill tot 15 minutes with the
control knob set on HI.
NOTE: The longer you preheat the grill, the
darker the grill marks will be on wmr tood.
During cooking it mav be necessary to a(!iust
the heat setting. The control knob may be set
to any position between HI and I,O.
For proper searing and browning the grill
requires high heat,
_]th large pieces of meat or poult_ T you will
need to turn the heat to a lower heat setting
atter the tood has been seared. This lower
heat setting will allow the t0od to cook
through without bm'ning the outside.
Marinades and barbecue sauce shotdd be
added toward the end of cooking time. The
heat should be turned to low when sauces are
added.
Do not leave the grill unattended while it is on.
When you are finished cooking, allow the grill
and the drip trays to cool before cleaning them.
They should be cleaned each time they are used.

* When tm'ning the meat over, always use
a spatula as it will not puncture the meat
allowing the juices to Hnl out. This will help
to keep the meat juicy. Turn the meat only
once, as juices are lost when the meat is
repeatedly turned. Season or salt the meat
atter it has been cooked.
,bBe sure to trim any excess titt fl'om meat
or poultry. To prevent steaks or chops ti'om
curling while they are being cooked, slit the
fht arotmd the edges at about 2" intervals.
To test tier doneness, make a small cut its the
center of the meat.
* The aloneness of meat is attected by the
thickness of the cut. It is impossible to cook
a thin piece of meat to a rare aloneness.
A steak should be at least 1" thick to have
it turn out rare and juicy. The cooking time
is atti_cted by the temperature of the meat
when you start to cook it, the size and shape
of the cut and the kind of meat w)u are
cooking. The degree of aloneness desired
also aL_i_cts the time.

The griddle is made fl'om Type 304 stainless
steel and highly polished to provide a smooth
cooking stsrt_tce. It is i_ormal tier it to darken
with rise as oils cook onto the stsrl_tce to
provide a stick-resistant base or "seasoning."
The griddle is them_ostatically controlled
and cycles on and off to mailmfin the set
temperature. A light will glow to indicate
the griddle is on.
The griddle assembly should not be removed
for cleaning.
Once the unit is in position, the rear center
shipping screw can be removed. It is located
beneath the griddle flue cover. I),emove the flue
cover by lilting it straight 51p. Be careful not to
scratch the backguard during remowd of the
lltse coves'.
The two outer screws are leveling screws.
Do not remove these two screws. They can be
turned to level the griddle or to provide a
ti_rward slope to help grease and oils to drain
awav ti'om the tood being cooked. After using
the griddle a few times you will be able to judge
the slope best for the toods vou are cooking
and vour personal preference.
When replacing the griddle title coves; ei_sure
that the cover slips to the outside of the fl'ont and
back metal flanges of the fixed griddle assembly.
This will esasure a tight fit of the title cover.

Seasoning

Before using the griddle for the first time,
it must be seasoned.
If the griddle has not been used for a period
of time, it should be reseasoned.
To season the griddle:
1 Clean tile griddle thoroughly with hot, soapy
water to remove ally protective coating.
2 Rinse with a mixture of 1 quart water and
1 cup white vinegar. Dry thoroughl>
3 Pore" 1 teaspoon vegetable oil into the
center of the griddle. Do not use corn oil as
it can get stick> Rub the oil over the entire
surtace of the griddle using a hea W cloth.
4 Turn the control knob to a medium setting
(350°F). Turn the heat off when the oil
begins to smoke. Allow the griddle to cool.
5 Repeat step 3. Be sm'e to cover the entire
surthce with the oil.
6 Repeat step 4. Allow the griddle to cool.
Wipe the entire surthce of the griddle
using a hea\ T cloth. Apply a very thin laver
of vegetable oil. The griddle is now ready
to rise.
Using the
griddle
Beibre starting to cook on tile griddle,
be sure the drip tray and liners are ill
place. Select the cooking temperatm'e
and preheat ti/r 15 minutes.
NOTE: When tile griddle is properly
seasoned, it can be used without ally
additional shortening. However,
shortening call be used fill" flavor.
